The roots of sake rice, the miraculous sake rice "Omachi" a type of sake rice that has evolved through continuous cross-breeding of various rice varieties such as Yamadanishiki and Gohyakumangoku, but it was discovered more than 100 years ago at the end of the Edo period (1603-1868) and is said to be the root of Japan's oldest strain of sake rice. Because it is difficult to increase production of this type of rice strain due to its tall stature and low susceptibility to plant disease. "Omachi" is also called "The miraculous sake rice".
We use Omachi harvested near our brewery as our raw material. At one time, Omachi was on the verge of extinction, but because of the warm climate and low occurrence of natural disasters in Okayama Prefecture, it was able to be cultivated continuously. Today, 95% of Omachi is produced in Okayama Prefecture. Okayama Prefecture, also known as the "Land of Sunshine," has long hours of sunshine, abundant fresh water, and gentle breezes. This climate makes it easy to grow Omachi, which is considered difficult to cultivate.

This is a Junmai Daiginjo sake brewed with 40% polished Omachi rice, from Akaiwa, Okayama Prefecture. Omachi is said to be a difficult variety to handle in general. By carefully managing the fermentation process, we have created a juicy taste with a strong sense of rice extract.
Both rice and water are locally produced. For the rice in particular, we use only "Omachi" rice from Akaiwa City, Okayama Prefecture, which has been revived by Toshimori Shuzo. The rice is rich in extracts, and the juicy flavor of the rice can be clearly felt.
Akaiwa City in Okayama Prefecture is an area where good quality Omachi rice was once cultivated. The Toshimori Sake Brewery is determined to revive Omachi rice, which had become a myth in the past. In cooperation with local farmers, they have successfully revived the "Akaiwa Omachi". They cherish their hometown and aim to make true local sake.
We believe that a regional sake can only be a true regional sake if it is brewed with "local rice, local water, and local climate and weather. Our company, Toshimori Shuzo, has revived the "Omachi" sake rice, which had become a myth. We cultivate Omachi in our own rice fields, and aim to become a brewery that provides all the raw materials in-house, like a Bordeaux chateau or a Burgundy Domaine, where the entire process from raw material production to brewing is integrated.

When poured into a clear glass, it has a thick consistency that suggests juiciness, and falls lazily over the edge of the glass.
By swirling the wine glass lightly, you can feel the fullness of the Omachi rice and the fruity aroma of green apple. The aroma gradually spreads from the center of the glass. It is not a strong Ginjo aroma, but rather a fluffy aroma that blends in well.

Initially, I recommend taking it out of the refrigerator and pouring it into a wine glass at a cool temperature (around 10 degrees Celsius). Afterwards, bring it back to room temperature to enjoy the swelling of the rice flavor and the expansion of the flavor across the tongue.
