The great clear water gushing from the back mountain 2 kilometers away from the brewery is the ideal water for brewing. The water quality is very soft (31PPM), does not contain iron, and is clear and clean. Because soft water has high permeability and good absorption, it can easily bring out the umami taste and aroma of rice, which is the most suitable for wine making."Single Origine Sake Uonuma", which is 80% brewed from water, is made from 80% water. We only use high-quality water that is bred from the land of Uonuma.
