「FRESH VINTAGE」is characterized by its "fresh taste with the texture of vintage sake". 10 years of experimenting of maturation below 0°C allows us to find out each sake's quaity and maturation period.

By maturing Shiboritate (freshly squeezed) sake for at least one year in sub-zero temperatures (-5°C), the unique flavor of matured sake is not released, and the mellow, tart taste of matured sake is combined with the freshness of Shiboritate sake to create a sake with a contradictory flavor that you have never experienced before.

「FRESH VINTAGE」has a fresh flavor and a mellow, tart texture. It has a pleasant, not overpowering, rice-derived aroma that rises gently from the glass, and a rich sweetness and soft acidity that spread quickly across the tongue, reminiscent of fruit.

The best way to enjoy 「FRESH VINTAGE」 is to serve it in a chilled wine glass at a temperature between 0°C and 5°C and enjoy the flavors as they slowly blossom. Then try to warm it to 40°C ~ 50°C, you will be impressed by how fast the flavor explode. Feel the flavor that was trapped in the molecules during low temperature maturation blossomed all at once.

Yamadanishiki rice is the most highly regarded of all sake rices. 「FRESH VINTAGE 2018」 is made from 100% Yamadanishiki rice from Hyogo Prefecture, On the palate, it has a rich, elegant sweetness derived from the sake rice.

The nose is mild and reminiscent of yoghurt.
The KURAND staff's comment that it has a "mellow and soft mouthfeel" is very true.
You can enjoy it with just sake without any side dishes.
It is also very versatile when paired with side dishes.
Naturally, it is easy to pair with seafood salads and cold tofu, but it also goes well with dishes seasoned with sweet and spicy bean paste.
It also washes away the strong fishy smell of salted fish.

 

The feeling of walking across a lotus leaf.
The lotus is the paradise. The freshness and freshness of this sake, as if it were made by collecting the morning dew on the lotus leaves, goes down your throat. It is as refreshing as wine, and has the clean, crisp finish of sake. But that's only the first glass, and the mood changes after the second. From the second glass onwards, the mood changes. Located in the center of the Banshu Plain, Japan's largest sake rice production area. the Fukunishiki Sake Brewery was established in 1839. It is a small but faithful sake brewer. Since 1992, all of their sake has been made from pure rice, and since 1996, all of their production are using 100% rice grown locally in Kasai City. Their ambition is honest and pure "To create a sake that is loved by the locals". The sake‘s color is slightly mineral-blue and its acidity is smooth from fermentation. The consistent and heartfelt taste is proof of the love of rice and the love of rice.
